Banana Delight
6 bananas, peeled and split lengthwise
1 cup orange juice
The zest of 2 oranges
1 cup brown sugar
1/2 cup dried cake crumbs from a yellow cake
1/2 cup grated coconut
1/4 teaspoon freshly grated nutmeg
1/4 teaspoon cinnamon
6 scoops French vanilla ice cream
Preheat oven to 350F.Place split bananas in buttered baking dish in a single layer.
Combine orange juice, orange zest and brown sugar, and pour over the bananas.
Mix together crumbs, coconut, nutmeg and cinnamon, and sprinkle over the bananas. Bake for 20 minutes.
Serve warm topped with ice cream.
