Applesauce Bread
1-1/2 cups flour
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon salt
1 teaspoon cinnamon
1/2 teaspoon freshly
grated nutmeg
1/2 cup firmly packed brown sugar
1 cup dried fruit, such as raisins, cherries or cranberries
1 cup rolled oats
2 eggs, beaten
1/3 cup Canola oil
1 cup sweetened applesauce
Preheat oven to 350F.
Sift together flour, baking powder, baking soda, salt and spices. Stir in sugar, raisins and oats. Add remaining ingredients. Stir only until dry ingredients are moistened.
Pour into greased 9x5x3 pan. Bake for 1 hour. Remove from pan immediately; cool. Wrap tightly to store leftovers, if there are any.
